Savoury Waffles

Travellers to distant places often realize that travel can change one’s culinary favourites through just one meal. And now, in the uncharted waters of lockdowns and restricted travel, culinary delights are found closer to home. Sonder Coffee Bar in Lethbridge brought us an unexpected surprise that altered the course of our breakfast favorites forever through their “hearty waffle”. We tried to recreate this elegant, tasteful dish at home, with remarkable results, equalling those of the Sonder Coffee Bar.

Make or toast a waffle from your favourite waffle recipe (we used this recipe). An eggo waffle will suffice, although it will not equal to the flavour of a freshly baked waffle. Butter the waffle according to taste, drizzle lightly with maple syrup. Top the waffle with brie (or a milder cheese if you prefer), followed by alfalfa or clover sprouts. Lay the egg, scrambled or whole, on top of the sprouts. Top with more sprouts, followed by a drizzle of maple syrup (according to taste). Bon appetit!

Toasted waffle

Maple syrup

Brie cheese (or cheddar for a milder flavour)

Alfalfa or clover sprouts

Scrambled or fried egg
